Paul Flynn Tannery Restaurant, Cookery School & Town House, Dungarvan, County Waterford

Tannery Chef and owner Paul Flynn focuses on cooking modern Irish food with a quirky twist which is evident in his signature dishes. He believes it is important to cook with produce bought locally on any given day and endeavors to buy local produce as much as possible. The restaurant has developed a network of small producers to provide the highest quality ingredients which are the inspiration for their dishes and reflect the changing seasons.

The Tannery restaurant, situated by Dungarvan's quayside has a bright modern interior over two floors. The building itself dates back to the 1800's and has the perfect blend of exposed beams, stone walls and designer pieces which create a unique and stylish setting where one can enjoy the Tannery's culinary delights.

In addition to his much reviewed Tannery restaurant Paul also runs The Tannery Townhouse and Cookery School with his wife Máire.
