He believes it is important to cook with produce bought locally on any given day and endeavors to buy local produce as much as possible. The Tannery restaurant, situated by Dungarvan's quayside has a bright modern interior over two floors. The building itself dates back to the 1800's and has the perfect blend of exposed beams, stone walls and designer pieces which create a unique and stylish setting where one can enjoy the Tannery's culinary delights.
In addition to his much reviewed Tannery restaurant Paul also runs The Tannery Townhouse and Cookery School with his wife Máire.
